Any Shepherd’s Pie lovers out there? I almost didn’t share this post because it was so easy to make, hence the instant potatoes, that I figured “everyone” knows how to do this but then my mom reminded me, “not everyone might think about single serve portions.”

Today we are sharing my Mom’s Single Serve Instant Potato Shepherd’s Pie. My mom is the master of quick and easy meals and growing up, she always made a home cooked meal for dinner and she worked full time!

She was big into “eating at the table as a family.” While we deviate from the traditional “sitting at the table as a family” during the week, we still try to have a home cooked meal a few times during the week.

Did you know that all you need to do is brown your meet in a skillet (which takes about 10 minutes) and everything else is cooked in the microwave in under 5 minutes?

This literally is the easiest Shepherd’s Pie you will ever make. All you need is ground beef, 1 package of Instant Potatoes and a can of corn.

All Crocks are from HomeGoods and they are oven, microwave, freezer and dishwasher safe!

Supply List

  • 1 lb lean ground beef
  • 1 can corn drained
  • 1 package Instant potatoes I used Idahoan Roasted Garlic
  • Paprika seasoning

Instructions : Step by Step

  • Brown beef in skillet
  • Cook potatoes as directed in microwave
  • (grease bottom of pan or dish with butter to prevent sticking) Layer single serve cookware or a baking pan starting with cooked ground beef, corn and potato. We did two layers.
  • Sprinkle paprika on top
  • Bake 375 for 15-20 minutes until top is slightly browned

When we have time, we make our own mashed potatoes but during the week, life is crazy and sometimes the instant potatoes are a must.

My dad was happy when he came home from work and saw the individual dishes filled with Shepherd’s Pie. He said, “are two of these for me and your Maaaaamaaaa?”

  3. I love that this would be an easy but delicious recipe for my mom who is in ill health but still steadfastly maintaining her living independence. It would be so easy for her to make this – and since it’s in single serving portions she would have great meal planning AND nothing would get too heavy for her to lift comfortably.
