Thank you for the emails about my grandfather’s upcoming marriage! lol. Isn’t that funny? Any Shepherd’s Pie lovers out there? I almost didn’t share this post because it was so easy to make, hence the instant potatoes, that I figured “everyone” knows how to do this but then my mom reminded me, “not everyone might think about single serve portions.” Today we are sharing my Mom’s Single Serve Instant Potato Shepherd’s Pie. My mom is the master of quick and easy meals and growing up, she always made a home cooked meal for dinner and she worked full time! She was big into “eating at the table as a family.” While we deviate from the traditional “sitting at the table as a family” during the week, we still try to have a home cooked meal a few times during the week.
Did you know that all you need to do is brown your meet in a skillet (which takes about 10 minutes) and everything else is cooked in the microwave in under 5 minutes? This literally is the easiest Shepherd’s Pie you will ever make. All you need is ground beef, 1 package of Instant Potatoes and a can of corn.
All Crocks are from HomeGoods and they are oven, microwave, freezer and dishwasher safe!
