This is the perfect for breakfast if you meal prep! Make them Sunday night, grab them all week for an easy breakfast.

Why I Stopped Buying Starbucks Egg Bites

I used to spend $20+ a week on Starbucks egg bites. Not because they’re amazing (let’s be real, they’re fine), but because I’m terrible at planning ahead and “starving while running errands” is apparently my default state.

Then I did the math. At $6+ per serving, I was dropping nearly $1000 a year on what’s basically a muffin tin full of cottage cheese eggs. Meanwhile, I could make 2 dozen at home for less than $6.

The bigger win?

I actually control what goes in them.

Store-bought versions pack in way more sodium than you’d think, plus a bunch of ingredients I can’t pronounce.

The cottage cheese does two things: it keeps them soft and moist (even after reheating), and it adds serious protein.

You’re getting about 10-12g of protein packed into each bite, depending on what else you throw in. That’s what makes them such a solid quick breakfast option when you need something that’ll actually keep you full.

Also, there’s no crust. No pastry. Just eggs, cheese, and whatever fillings you want. This makes them naturally gluten-free if you skip the flour or use a gluten-free version (which I do).

The Secret Ingredient: Why Cottage Cheese?

Starbucks uses a sous vide method to get that silky texture. You don’t have time for that. Neither do I.

Cottage cheese mimics that same creamy consistency when baked in a regular oven. The curds break down as they cook, creating little pockets of moisture that keep everything tender. (Science is cool when it makes your breakfast better.)

I blend mine smooth because I’m not a fan of cottage cheese chunks, but if you don’t mind the texture, you can skip that step. Either way, cottage cheese eggs turn out way better than trying to replicate Starbucks with heavy cream or milk alone.

  • 6 eggs
  • 1 cup Hood Cottage Cheese with Chive
  • 1/2 cup Hood Half and Half
  • 1 cup chopped fresh spinach
  • 1 cup chopped green and yellow peppers
  • 1 cup chopped mushrooms
  • 1 cup shredded cheddar cheese
  • 1 cup gluten free flour you can use regular flour too
  • 2 tbsp basil
  • 1 tsp salt
  • Spray cooking butter for muffin tins

Instructions : Step by Step

  • Whisk eggs
  • Stir in all ingredients except the flour
  • Once mixed, stir in flour
  • Spray 12 muffin tin with butter (grease muffin tin)
  • Spoon mixture into muffin tin almost to the top (a ladle works good)
  • Sprinkle a pinch of cheddar cheese on each muffin
  • Wipe any residue/butter on tin with wet paper towel to prevent burning around muffins
  • Bake 400 degrees for 20 minutes or until golden brown

Parchment muffin liners are non-negotiable. Regular paper liners will stick like nobody’s business, and you’ll end up peeling off half your egg bite with the wrapper.

If you can’t find parchment liners, grease the heck out of a silicone muffin pan. That works too, though cleanup takes longer.

One thing I learned the hard way: watery vegetables like zucchini or tomatoes need to be pre-cooked and drained, or your egg bites will turn into soggy little pucks. Mushrooms too—sauté them first to cook off the moisture.

How Long Do Cottage Cheese Egg Bites Last?

In the fridge: 5 days. Store them in an airtight container. This is what makes them perfect for breakfast meal prep.

In the freezer: up to 3 months. Wrap each one individually in plastic wrap, then toss them all in a freezer bag. This way you can grab just one or two at a time for a quick breakfast.

Reheating: Microwave for 30-45 seconds if refrigerated, 60-90 seconds if frozen. They won’t be quite as fluffy as fresh, but they’re still miles better than anything from a drive-thru.

Common Egg Bite Mistakes (And How to Fix Them)

They’re rubbery: You overcooked them. Pull them out when they’re just set in the center—they’ll continue cooking a bit as they cool.

They’re watery: Your veggies had too much moisture. Pre-cook and drain anything watery before adding it to the egg mixture.

They deflate: That’s normal. Egg bites puff up in the oven and settle as they cool. They’re not supposed to stay tall like regular muffins.

They stick to the liners: Use parchment, not regular paper.

Can I make egg bites without cottage cheese?

    These egg bite muffins are fantastic. Even our 10 yo grandson gave them a thumbs up. I made the recipe just as written and loved it, but I can also see how I might add my own variations next time. Adding some bacon or sausage crumbles would be good, changing the cheese and/or veggies would be easy, but as I said, perfect as written. Yum!
