I recently made an easy scallops recipe that turned out delicious. It’s healthy, light, and simple to make. I usually bake scallops in the oven, but the breading and butter aren’t the healthiest, so this time I decided to sear the scallops on the stovetop and mix them with orzo, peppers, and tomatoes.

If you are looking for a quick seafood dinner idea that isn’t full of breading and butter, this is a great recipe!

If you are running low on time, just purchase the peppers and olives already chopped or sliced.

I often do that when I am pressed for time.

Many times after I eat pasta, I feel bloated and disgusting but something about Orzo seems to sit well with my stomach. Probably because it’s smaller in size and I consume less! -ha.

This is an excellent dinner during the week because it’s quick, easy and healthy.

This recipe was perfect for 4 but next time, I would probably get 2lbs of scallops.

  1. As I matured I found I could no longer tolerate dairy. Usually pasta has cheese with it. You might try eliminating it to see if that is what is causing your bloating. It was for me! I love pasta and plan to try this recipe. It sounds so good and easy, too. thank you for sharing it with us.
