Favorite Chicken Wrap {love this!}

We had an eventful weekend doing yard work and cleaning out flower beds and it’s still not finished. Hopefully by the end of the week, it will be done. I made a delicious chicken wrap over the weekend based on a healthy tip from my friend Nicole over at Family Table Treasures. She is a friend from home that just started a blog! She told me to par boil chicken and mix with cucumbers. Par boiling chicken sounded disgusting but I tried it and was pleasantly surprised with the results! I decided boil the chicken though until it was fully cooked.
Eating healthy isn’t easy. In fact, preparing the food so it’s readily available can be time consuming. I par boiled 3 chicken breasts and mixed in the ingredients and it lasted the entire week which was super helpful at lunch or dinner time.
Favorite Chicken Wrap

- 3 chicken breasts
- 1 cucumber
- 1/2 cup shredded carrots
- 1 scallion {optional}
- 1/4 cup fresh parsley
- 1/4 cup goat cheese {optional}
- Sesame seeds {optional}
- Salt and pepper
- Mayonaise
- Low carb/low sugar flat whole grain wrap {I used Joseph's brand}
Instructions : Step by Step
- Boil chicken breast for 18-20 minutes or until no pink in middle
- Once cooked remove chicken from water and lay on a cutting board, pat dry and cool
- Dice up cooled chicken and place in large bowl {I shredded some of the chicken}
- Add diced cucumbers and chopped scallion
- Dice shredded carrots and add to mixture
- Add chopped parsley and gently mix
- Season to taste with salt and pepper
- Top with goat cheese
- I didn't mix the mayo in until I was ready to make a wrap. I left the mixture in a bowl during the week and just added a small amount of mayo to a cup of the chicken salad each day I made a wrap and sprinkled a few sesame seeds in.
You can also spread a thin layer of avocado hummus on the wrap then add your cup of chicken salad (mixed with mayo) to the wrap. I chose a healthy mayo and the added small amount of hummus gave the wrap a little extra flavor. A few pieces of lettuce made this favorite chicken wrap complete along with low carb potato chips. Try mixing everything together in a bowl at the beginning of the week minus the mayo and you will be amazed at how your lunches will be readily available and healthy to-boot!

This looks really good! I love chicken salad, but most are too mayo-y for me.
Try the mayo with canola oil, it’s actually not bad 🙂
I am going to try this! Thinking I might use sliced olives in it. It sure looks yummy!
Yummm!!!! Great idea….I think I’ll mash up avocado in the chicken instead of mayo when ready to eat, love it!
