Supply List
- Chop 3 seedless cucumbers
- 1 cup Hood Cottage Cheese with Chive
- Pinch of salt and pepper
- 1 Avocado for spread *optional
- Bread with crust removed or Whole Grain Sandwich Thins
Instructions : Step by Step
- Mix cucumbers, cottage cheese and seasonings in a bowl.
- Remove crust from bread, spread a thin layer of fresh avocado on slice of bread and top with cottage cheese mixture. Place top piece of bread on top and cut in half (or squares and serve as an appetizer)

How to Make a Cucumber Sandwich with Cottage Cheese
What you need:
- 2 slices of your favorite healthy bread (I use whole grain or sourdough)
- 1/4 cup cottage cheese (I use Hood Cottage Cheese)
- 1/2 cucumber, thinly sliced
- 1/2 avocado, sliced
- Salt and pepper to taste
- Optional: fresh dill, everything bagel seasoning, or red pepper flakes
Assembly:
- Toast your bread if you want (I usually don’t because I’m impatient)
- Spread cottage cheese on both slices
- Layer cucumber slices on one side
- Add avocado slices
- Season with salt, pepper, and whatever else sounds good
- Close it up and eat
That’s it. Five minutes, max.
