A 5 minute cucumber sandwich? Say whaaa? My husband asked me what I was doing a couple days ago as I was making lunch and I said, “I am making us cucumber sandwiches.” He said, “umm, I don’t want one.” -ha. I said, “you just wait, I am adding cottage cheese with chive and you are going to love it!” We recently partnered with Hood® to whip up a super easy snack and these mini cucumber sandwiches with Hood Cottage Cheese with Chive are delicious and so simple to make.

5 Minute Cucumber Sandwich with Cottage Cheese
5 minute Cucumber Sandwich + Cottage Cheese
- Chop 3 seedless cucumbers
- 1 cup Hood Cottage Cheese with Chive
- Pinch of salt and pepper
- 1 Avocado for spread *optional
- Bread with crust removed or Whole Grain Sandwich Thins
- Mix cucumbers, cottage cheese and seasonings in a bowl.
- Remove crust from bread, spread a thin layer of fresh avocado on slice of bread and top with cottage cheese mixture. Place top piece of bread on top and cut in half (or squares and serve as an appetizer)

I used Hood Cottage Cheese in both of these recipes and they are not only delicious, they are quick and easy to make. Cottage cheese is a healthy snack that fills you up and tastes delicious. I am guilty of eating a couple of the single-serve containers a day. I dip my crackers in it, fruit, veggie sticks and have been known to spread it on my bagel as an alternative to cream cheese.
