Tofu Stir Fry dinner {with eggplant}
Never in a million years would I have thought I would make a tofu stir fry dinner. I joined a boot camp fitness program the beginning of the month at which point, I decided to try and change my eating habits for 30 days. I have been attempting to cut out sugar and carbs and let me tell you, it isn’t easy. My dad saw me preparing this dinner and he said, I hope you don’t think I am eating that? He is a meat and potato guy! I will admit, I actually loved this dinner and so did the rest of the family.
Be sure to drain and pat dry the tofu before cooking.
Tofu Stir Fry dinner {with eggplant}
Ingredients
- 1 package extra firm tofu
- 3 tbsp coconut oil
- 2 tbsp crushed garlic
- 3 peppers {I used green and red} sliced
- 1 large eggplant skinned and cubed
- 2 large handfuls of sliced mushrooms
- 2 tbsp margarine or butter
- lemon
- 1 cup cooked brown rice
Instructions
- Heat skillet on medium heat
- Add 2 tbsp coconut oil and garlic
- Once garlic is brown add cubed tofu {be sure to drain tofu and pat dry before cutting into cubes}
- Cook Tofu for 3 minutes on each side and then remove from skillet adding to a side dish. Leave most of the oil still in the skillet
- Place Tofu in fridge while you cook the remaining vegetables
- Add 1 tbsp coconut oil and 2 tbsp margarine
- Turn up heat to medium and saute sliced peppers, mushrooms and eggplant for about 6-8 minutes or until vegetables are slightly soft
- Once vegetables are cooked, add cooked tofu and gently mix
- Drizzle two lemon wedges over the top
- Cook brown rice (I used gluten free) in microwave and once cooked, gently mix in with vegetables
- Serve over a bed of fresh greens or alone
- Serves 3-4
- If making for a larger crowd, simply double or triple the ingredients
Would you believe me if I told you I have never tried tofu until now. I am the biggest junk food junkie and eating healthy has never really been a priority for me. However with age, I am finding that my body can’t consume the amount of carbs and sugar that I have been accustomed to all these years. I will admit, being 16 days in to a full blown 30 day bootcamp fitness program, I am actually feeling much better. My energy level is up and I swear, excessive sugar and carbs were making me feel bloated and tired. I am not sure if I will go beyond the 30 days with all this craziness but my fitness coach swears I will. Â Time will tell!
