Easy Butternut Squash Soup

Easy butternut squash soup was never on my radar, until now. I had never made it before, but when a friend shared her simple recipe, I couldn’t believe how quick and effortless it was.
There’s just something about winter that makes me want to simmer soups, bake, and pull out the crockpot, and my mom’s the same way.
If you’re in the mood for something cozy, this is your sign to make a big pot of butternut squash soup this weekend.
All you need are a few basic ingredients and yes, I totally buy the pre-cut squash to make things even easier!
Easy Butternut Squash Soup

Supply List
- 2 packages of cut up butternut squash or you can buy whole squash and cut up yourself – approx 2 squash
- 2 containers chicken broth
- 1 large sweet white onion
- 1 small container cream
- crushed garlic
- 1 stick butter
- nutmeg or cinnamon optional
Instructions : Step by Step
- Add stick butter, garlic, 1 onion (diced) sauté then add squash fill w chicken broth to cover squash and boil till soft. Cool. Put thru blender and add cream to liking and salt and pepper.
- Top with a hint of nutmeg or sprinkle cinnamon *optional
Easy butternut squash soup is officially my new winter obsession, and I can’t believe I waited this long to make it!
A friend shared her go-to recipe and it’s ridiculously simple, cozy, and full of flavor.
Did you know butternut squash is packed with vitamin A and fiber? It’s basically comfort food that’s secretly healthy.
This recipe made about 10 bowls of soup, so we had plenty leftover for lunch the next day.
It also freezes beautifully! Just let it cool, portion it into freezer-safe containers, and stash it away for a chilly night when you don’t feel like cooking.
Serve it with your favorite bread or a handful of soup crackers for the perfect pairing.

Just checked out your Comfort Foods, and believe it or not, there are a couple of recipes that I’ve been making for years – the Shepherd’s Pie and the Butternut Squash Soup – fantastic. However, I would love the Chicken Pot Pie recipe but when I click the name, it keeps bringing me to the Butternut Squash recipe. Any ideas? Thanks.
