We are now in our second full week of school, and I will admit I miss having mornings to sleep in past 6:30am and staying up late. The house is so quiet during the day, kind of strange. As many of you know, I partnered with Ellio’s Pizza this year, featuring fun and quick meal, snack and entertaining ideas. This month we actually created a video for you. Oh, yes, and it was so much fun! I decided to shake things up a bit this month by adding some of my family’s favorite, fun toppings to their pizza. Yes, chicken, hot dogs and green peppers are some of the favorites around here.
The film crew arrived and spent the day with me creating this fabulous video. I felt kind of dorky creating it but it actually came out nice. Do you ever feel silly watching yourself on video? I cracked up watching myself.

We are not very fussy here in our home. We tend to pile on the food we love and go with it. Some would say, “Don’t mix the chicken and hot dogs together,” but not us. It all ends up in the same place, right? As my grandfather says, “Load it up!”
You can add anything you want to this pizza, although not at all necessary. Not only is the pizza quick and easy to make, the crust is delicious and the mozzarella cheese is 100% natural. I always try to add some kind of a fruit or vegetable as a side dish to whatever I am making. Besides green and red peppers, we also love pineapple and chicken together on top of pizza. Have you ever tried that? It’s delicious!
I chose to use the Ellio’s Extra Cheese variety for this after-school snack. I bought already cooked chicken strips because I was running short on time and didn’t have time to cook the chicken. You can also buy an already cooked rotisserie from your local supermarket and chop up small pieces to add to your pizza. Once your pizza is decorated, pop it in the oven or toaster oven and that’s it. In about 12 minutes, your pizza is done.
