Chicken and Rice {mom’s favorite}

Last week was a bit of a blur. My grandfather was in and out of doctor appointments and then spent 2 nights in the hospital due to pneumonia. My mom is still layed up from her surgery over a week ago on her leg so needless to say, it’s been a little crazy here. There are some behind the scene DIY projects going on that we will be sharing throughout April but in the meantime, here is a fantastic chicken and rice dinner that I made for everyone a couple nights ago.

Tip: use a meat tenderizer mallet to tenderize your chicken breast.

Chicken & Rice {mom’s favorite}

Supply List

  • 1 stick butter
  • 2 tablespoons crushed garlic
  • 1 cup white rice
  • 3 large chicken breast
  • Salt Pepper and Onion powder
  • Parsley
  • 1 can cream of mushroom soup 10 3/4 ounce
  • 1 cup water
  • 1/4 cup white wine optional
  • 1 bag frozen broccoli 12 ounce

Instructions : Step by Step

  • Melt butter and pour in a 9x13 baking dish
  • Sprinkle uncooked rice over butter evenly across dish
  • Pour water over rice
  • Rinse and dry chicken breasts and use a meat tenderizer mallet on both sides of meat
  • Add salt, pepper and onion powder to each piece of chicken
  • Lay chicken on top of rice
  • Mix soup, wine and 3/4 of the bag of broccoli in a bowl and pour over chicken and rice
  • You may need to use a spatula to spread the soup mixture evenly across the chicken and rice
  • Sprinkle with parsley
  • Cover with foil
  • Bake 375 for 35-40 minutes or until no pink in chicken
  • Remove foil during last 15 minutes

This is a quick and easy dinner that everyone will love. There are so many variations of chicken and rice, this one just happens to be my mom’s favorite. I made a dish of this for my grandfather the first night he got home from the hospital and he was so grateful. He is happy to be home :).
