Do you run around like a chicken with your head cut off during the week? Weekdays are busy for us (and you I am sure) so we are always looking for meals that are quick and easy. One night during the week is a fast, on-the-go meal and today I am sharing a quick 20 minute Chicken Parmesan Sandwich recipe that everyone will love. My son absolutely loves chicken parm and even he can make this meal. It’s super easy and I am going to show you how to make it with On-Cor 6 Breaded Chicken Parmagiana Patties with Tomato Sauce
As I mentioned in my post last month featuring On-Cor Lasagna with Meat Sauce, frozen food always makes me skeptical but this is my second time around being pleasantly surprised with On-Cor. The On-Cor 6 Breaded Chicken Parmagiana Patties with Tomato Sauce were easy to cook. Ready in Minutes!

To make these easy 20 minute chicken parmesan sandwiches for the entire family, all you need to do is cook the chicken patties in the carton provided (I microwaved for 8 minutes), add a cooked chicken patty with sauce to each bun, if you are a cheese lover, add shredded mozzarella on top of each patty. Butter the top of each roll and cover the patties. Bake in the oven for 12 minutes on 375 degrees and that’s it! Serve with your favorite chips, sweet potato fries (one of our favorites) or steak fries. One of the things that I love is that all of their entrées have no monosodium glutamate (MSG) added.
Doesn’t it look delicious? 2018 is a clean slate to start new traditions as well. If we are not running out to a sporting event or have somewhere to be, I love the idea of reconnecting with family while dinner cooks. It seems like time passes by so quickly that making the time to either play a game together, bake or watch a favorite tv show, is not always easy. I have made it my mission this year, to try and spend some quality time as a family connecting and doing something fun together, even if it’s while dinner cooks! -ha.

I definitely want to be more present. Between work, caring for aging parents, and the everyday to dos that come with the house, pets, and kids, I tend to go on autopilot. I don’t want to check out…the days and weeks and years are going to fast!

My resolution is to focus more on myself. While that sounds tremendously selfish, I think focusing on my own health and happiness will translate into a better ME altogether – better mom, better wife, better boss, better person. I don’t feel as though I’ve been the best I can be lately and that’s most likely due to not giving myself the attention that I need so that I can offer others my best as well. So, as selfish as it seems, this is my resolution. I just want to be a better person in every sense.

Plan out more meals that we can eat together as a family. I hate the end of the day question of what are we going to eat!

Am going to get some of these today. We are older, retired and active, so this would make a quick supper for us to sit and enjoy together after a busy day. We will add a salad and have a healthy meal. Sure hope they turn out as good as they look! Our resolution for this year is to try new foods and recipes.

My new years resolution is to be there more for my family. I am working less and doing more out of my home and we are actually off to a great start. We have been out sledding more and just having fun.

We have committed to spending 30 minutes of real, QUALITY time together every, single day.
No matter what our schedules say, what may get come up, etc. Wexan always find a way to fit 30 min. Of something in.
& to make sure we don’t “fail” & can really make it work in our real lives, we have come up w/some ways to work around our busy- so there’s no excuses. We’ve also come up w/a list of ways to make it fun- (for those days when we don’t necessarily feel like spending quality time w/each other- You know the ones I’m talking about! Ha 🙂 We all have them from time to time)
We’ve tried to plan for everything we could com even up w/ & I hope that w/ practice, it becomes so automatic for each of us, that we All make sure that it happens no matter what- time can’t be stopped & it goes by far too quickly. Family is so so important & if we can’t make a little dedicated time for them- what does that say about how much we truly value one another?
So far we are off to a great start & there’s something to be said for the power of conciously doing something & being 100% present. No phones/iPads, etc (+) real eye contact, real 2-sided conversations & the like.
We have a jar made up w/everyone’s contributions of ideas if we are really needing some motivation to make this happen (conversation starters/ mini quizzes to get to know one another better- (you know the things we don’t necessarily talk about/ the things that change w/each of us over time, etc)/some quick activities/ games/ideas…all things that are short, simple to make happen, most can be done pretty much anywhere & little things to do or treats to look forward to & so on)
I’m thinking that “Intenional” will be my 2018 word Bc I want to be more present, focus & truly intentional about all of the things I do in my life- how I spend my time, resources, decisions I make- etc. & I feel like as a family we will each look back & be so grateful that as a unit we intentionally dedicated ourselves to putting quantifiable effort into our relationships.
Life changes so quickly & we all always wish for more time together once we can no longer have it. No matter how much time we may get together, it’s never really enough… So I hope that someday we can at least say w/confidence that we made the most of what we had.

My resolution is to turn the computer, TV, cellphone etc off and focus on just having fun being together! My children are growing up way too fast and I need to stop working earlier in the day so my focus is my family! When we were reflecting on the past year, my husband and I asked the kids what was the favorite thing we did last year. Their answer was when we had family game night! That’s right! Not the vacations we took, money we spent, etc. It was the silly, loud times we spent together! So we are definitely focusing on that for 2018!
