This Mini Sugar Cookie Fruit Pizza Recipe makes the perfect little hand held treat. Crispy lime infused sugar cookies are topped with creamy lime cream cheese frosting and then decorated with your favorite fruits to make one delectable dessert! Sounds amazing right? Today I have a special treat for you! My friend (who lives down the street) is sharing one of her amazing recipes and she is the FIRST person to ever write a post for our blog. Hi everyone. My name is Nicole. I’m a Food Blogger friend (and personal friend) of Jess. I’m so excited that Jess invited me over to share some of my tasty recipes with all of you today!
Jess and I have known each other for many years now. We live in and grew up in the same little New England town. I wanted to share something sweet today since Valentine’s Day will be here before you know it. Who doesn’t love a little sweetness on Valentine’s Day?
Whenever I make a Fruit Pizza to bring to a party it definitely gets a lot of attention. The beautiful colors of all the different fruits really make heads turn and I hear lots of Oohs and Ahhs.
Think of the cookie as the canvas and the fruit as your paint. You can design some beautiful works of “fruit” art on your “cookie” canvas! I’ve even made a “New England Patriots” logo out of blueberries, strawberries, raspberries and a slice of banana cut into a star. Use your imagination and create your own work of art!
For these Mini Sugar Cookie Pizzas I decided to add little splash of color from some sliced kiwi, strawberries, raspberries, blackberries and blueberries. You could definitely go with more of an all red fruit theme if you want for Valentines Day though. Or if you are going to make them for “Game Day” use your teams colors.
You can either make one large Sugar Cookie Fruit Pizza with this recipe or pan of Mini Sugar Cookie Fruit Pizzas like I did here. I like the idea of finger food when you are going to a large gathering. Any way you make it though you’ll definitely make an impression when you walk in with this dessert.
Mini Sugar Cookie Fruit Pizza

- For the Lime Sugar Cookies
- 1/2 Cup Confectioner Sugar
- 1/2 Cup + more for topping cookies Granulated Sugar
- 1 Cup Unsalted butter softened
- 1 Large Egg
- 1 teaspoon Coconut extract or Vanilla extract
- Zest and juice from one lime
- 2 1/2 Cups All-purpose flour
- 1/2 teaspoon Cream of tartar
- 1/2 teaspoon Salt
- 1/2 teaspoon Baking soda
- For the Lime Cream Cheese Frosting
- 1 ,8 ounce package Cream Cheese softened
- 1/2 Cup Unsalted butter softened
- 2 1/2 Cups Confectioner Sugar
- Zest and juice from one lime
- Fruit for Topping
- 3 Kiwis
- 1 package Strawberries
- 1 ,6 ounce package Raspberries
- 1 ,6 ounce package Blackberries
- 1 ,6 ounce package Blueberries
Instructions : Step by Step
- For the Lime Sugar Cookies
- Preheat oven to 375 Degrees F.
- In a large mixing bowl cream together both sugars, butter, egg, coconut extract, lime zest and juice.
- In a separate bowl mix together flour, cream of tartar, salt, and baking soda.
- Add dry ingredients to wet ingredients; mix well.
- Roll dough into 2 inch balls and place about 1 inch apart on a cookie sheet.
- In a small dish filled with extra sugar, dip the bottom of a flat bottomed glass in the sugar and then press down on each dough ball to flatten. Dip glass bottom back into the sugar before you flatten each dough ball. (Flatten to about 1/4 inch thickness.)
- Bake for 8-10 minutes. Remove from oven and let cookies cool on a cooling rack to room temperature.
- For the Lime Cream Cheese Frosting
- In a large mixing bowl cream together butter and cream cheese for 3 minutes until light and fluffy.
- Gradually add sugar and mix on low to incorporate. Add lime zest and juice; cream for 3- 5 minutes until light and fluffy.
- Use a small offset spatula or butter knife to spread a dollop of frosting on each of your cooled cookies. Decorate with sliced fruit.
