Can I just tell you, I ate half the pan of these bars :(. Once I start, I can’t stop. It’s a bad, very bad thing when I bake. Magic cookie bars are my all time favorite sweet. They are the simplest and easiest cookie to make but be careful, they are SO addicting! Of course, my grandfather thought these were for him but I had to quickly remind him that his diabetes is out of control! He gave me dirty look and went back to watching tv. 🙂

Supply List

  • 1/2 cup butter {melted}
  • 1 1/2 cup graham cracker crumbs
  • 1 14 ounce can Sweetened condensed milk {I used Eagle brand}
  • 2 cups chocolate chips
  • 1 1/3 cup flaked coconut
  • 1 cup mini marshmallows

Instructions : Step by Step

  • In a 13×9 baking pan, coat with baking spray.
  • Mix the graham crackers and melted butter in a bowl and once mixed, spread evenly across the bottom of the pan pressing to the bottom.
  • Layer chocolate chips, marshmallows and coconut and press firmly with a fork.
  • Finish by pouring the condensed milk on top
  • NOTE: Many use nuts in place of the marshmallows but my son doesn’t like nuts so hence the marshmallows.
  • Bake 350 for 30 minutes or until light brown

My grandmother loves these as well. I think if I had offered to share half the pan with her, she would have joined me in eating these delicious magic cookie bars. ha. I personally let the bars cool and then place in the refrigerator as they are delicious cold!

  2. I grew up with Magic Cookie bars too! Love them….finally got smart as an adult and starting making them as the perfect quick sweet to bring to picnics, parties, etc. One thing we do differently–my mom always did this–is to use crushed cornflakes and not graham cracker crumbs. You put the stick of butter in the 9×13 pan and let it melt–then add crushed cornflakes–maybe about 2.5-3 cups or so. Press it down just like the graham crackers…..so YUM!! Makes this buttery crispy bottom that is the best part of the bars!!!
