Delicious easy haddock recipe that we always prepare for our Christmas Eve Feast of the Seven Fishes celebration. Haddock recipes are perfect for large crowds and not very fishy tasting so even kids will enjoy.

Instructions below. Serves between 2 and 4 people.
Add the olive oil, butter and garlic to the saucepan and cook on low for about 5 minutes then add the onions and and saute on low/medium heat for about 10 minutes.
Next add sliced black olives and white wine.
Add diced tomatoes and bring to a boil.
Once the sauce comes to a boil, add the haddock. You can substitute with cod as well.
Sprinkle with salt, pepper and parsley. Cover and let boil for 3-5 minutes then simmer for 15 minutes or until fish is cooked. The haddock will be done when it breaks off with a fork and is flakey. You will notice the fish start to break apart as it cooks.
