3-4chicken breastsrinsed and pat dry Poke holes with fork or knife to allow juices to get inside
1cupbrown minute rice
1 1/2cupschicken broth
3tspbutteror equivalent. I used "I can't believe it's not butter"
1red pepper sliced
1orange pepper sliced
SaltPepper, Garlic Salt (1 tsp each)
2tbspparsleysprinkle across top before baking
Instructions : Step by Step
Add rice, broth and butter to baking dish and mix
Lay chicken on top of rice and season
Lay sliced peppers on top
Cover with foil. Remove foil last 15 minutes
Bake 375 dgrees/ 35-40 minutes until chicken isn't pink inside
Tips
Just double the recipe if you have more people. You may need to add a bit more broth or water 1/2 way through cooking time if rice seems dry. I usually stir rice 1/2 way through and scrape the sides so it doesn't get to crispy on the sides of pan.
