Chicken Chili Taco Recipe {easy weekday dinner}

Chicken Chili Taco Recipe featuring Old El Paso

  • 1/4 cup olive oil
  • 3 cups cubed grilled chicken
  • 1 Old El Paso taco seasoning packet
  • 1 package of 10 Old El Paso taco shells
  • 1 cup diced canned tomatoes drained
  • 1 cup small canned black beans drained
  • 1 cup canned corn drained
  • 1 cup shredded Mexican cheese
  • Sour Cream optional
  • Shredded lettuce optional


  • Grill chicken and cut into small cubes
  • Heat olive oil over low heat and add cooked chicken
  • Mix in taco seasoning packet, tomatoes, beans and corn (be sure to drain all of them)
  • Cook over low/medium heat until hot
  • Remove from heat and simmer 10 minutes
  • Place taco shells on cookie sheet and fill will chicken mixture
  • Top with shredded cheese
  • Bake 375
  • -7 minutes or until shell is golden brown and cheese is melted
  • Once cooked, top with lettuce and sour cream


Feel free to add other toppings and if you prefer more beans ect., add them!
