Baked Chicken and Rice

How to make a baked chicken and rice dinner with red peppers. Perfect for weekday menu meal plan.

Ingredients
  

  • 3-4 chicken breasts rinsed and pat dry Poke holes with fork or knife to allow juices to get inside
  • 1 cup brown minute rice
  • 1 1/2 cups chicken broth
  • 3 tsp butter or equivalent. I used "I can't believe it's not butter"
  • 1 red pepper sliced
  • 1 orange pepper sliced
  • Salt Pepper, Garlic Salt (1 tsp each)
  • 2 tbsp parsley sprinkle across top before baking

Instructions
 

  • Add rice, broth and butter to baking dish and mix
  • Lay chicken on top of rice and season
  • Lay sliced peppers on top
  • Cover with foil. Remove foil last 15 minutes
  • Bake 375 dgrees/ 35-40 minutes until chicken isn't pink inside

Notes

Just double the recipe if you have more people. You may need to add a bit more broth or water 1/2 way through cooking time if rice seems dry. I usually stir rice 1/2 way through and scrape the sides so it doesn't get to crispy on the sides of pan.
