Easy Cottage Cheese Quiche Muffins with Veggies

Ingredients
  

  • 6 eggs
  • 1 cup Hood Cottage Cheese with Chive
  • 1/2 cup Hood Half and Half
  • 1 cup chopped fresh spinach
  • 1 cup chopped green and yellow peppers
  • 1 cup chopped mushrooms
  • 1 cup shredded cheddar cheese
  • 1 cup gluten free flour you can use regular flour too
  • 2 tbsp basil
  • 1 tsp salt
  • Spray cooking butter for muffin tins

Instructions
 

  • Whisk eggs
  • Stir in all ingredients except the flour
  • Once mixed, stir in flour
  • Spray 12 muffin tin with butter (grease muffin tin)
  • Spoon mixture into muffin tin almost to the top (a ladle works good)
  • Sprinkle a pinch of cheddar cheese on each muffin
  • Wipe any residue/butter on tin with wet paper towel to prevent burning around muffins
  • Bake 400 degrees for 20 minutes or until golden brown
  • Makes 12 muffins
