Mom’s Corned Beef & Cabbage {crockpot}

My mom's crock pot corned beef and cabbage recipe passed down from my grandmother. Simple and quick meal during the winter months and especially perfect for St. Patrick's Day. Prepare in the morning before work and it's ready when you get home!

Ingredients
  

  • Ingredients:
  • 1 small head of cabbage
  • 1 large bag of carrots
  • 5 Peeled potatoes
  • 1 -2 lb Corned Beef
  • 1 can beef broth
  • 3 cups water
  • Italian seasoning or pepper last hour of cooking

Instructions
 

  • Add your carrots and cabbage to the crockpot. Add water and beef broth. Place corned beef on top an add your potatoes. You will need to stuff the potatoes on the side of the corn beef and down towards the vegetables. Cover and cook on high for 7 hours. Corned beef is very salty and flavorful so it’s not necessary to season at this point, unless of course you want to :)
  • Servings 4-5
  • *keep in mind that every crockpot cooks differently. We usually know when it’s done when a fork goes in the potatoes and carrots nice and easy. The meat will also start to fall apart when fully cooked.

Notes

Corned beef is salty on it's own so we do not add a lot of seasoning during the cooking process.
