Mexican Chicken Taco Boat {Dip}

Ingredients
  • 1 cup cut up chicken pieces (I used left over chicken from the night before. You can also buy an already cooked rotisserie chicken too if you are short on time)
  • 1 package Old Elpaso soft taco boats
  • 1 can Old Elpaso Enchilada Sauce *optional
  • 1 can Old Elpaso Refried beans
  • 1 package cream cheese (softened)
  • 1 package shredded cheddar cheese
Instructions
  1. Heat oven 375 - Bake 8-10 minutes (until cheese is melted)
  2. Layer taco boats. First spread refried beans, then cream cheese, then chicken and top with cheese. You can pour a small amount of enchilada sauce over the boat if you prefer a little extra flavoring.
  3. Bake 8-10 min. (until cheese is melted and taco shells are light brown) .
  4. Top with lettuce and sour cream
  5. Serve with dipping taco chips
