Mom’s Corned Beef & Cabbage {crockpot}

Last week my mom shared her delicious chicken and dumplings recipe and this week she is sharing her corned beef and cabbage that she cooked a couple nights ago in the crockpot. This is the most simple recipe on the planet!

Ingredients: 

1 small head of cabbage

1 large bag of carrots

5 Peeled potatoes

1 -2 lb Corned Beef

1 can beef broth

3 cups water

Italian seasoning or pepper (last hour of cooking)

Directions:

Add your carrots and cabbage to the crockpot. Add water and beef broth. Place corned beef on top an add your potatoes. You will need to stuff the potatoes on the side of the corn beef and down towards the vegetables. Cover and cook on high for 7 hours. Corned beef is very salty and flavorful so it’s not necessary to season at this point, unless of course you want to :)

Servings 4-5

*keep in mind that every crockpot cooks differently. We usually know when it’s done when a fork goes in the potatoes and carrots nice and easy. The meat will also start to fall apart when fully cooked.

Not only is this easy but it’s so fast! Prep time is about 10 minutes.

Crockpot corned beef and cabbage is a childhood favorite of mine. I remember my mom always making this when I was a kid and it still tastes as delicious now as it did then. My mom is kind of liking the fact that I am sharing her dinners on our blog. I told her she now just needs to write the post and cook it! :)

    Crock pot recipes are my favorites and I am always looking for new ones that will fit my family. Thanks for the great inspiration to step outside myself and do something a little different than we usually do in our house! Love your blog.
